Ingredients

  • Stale bread (1 day old): 500 g
    cut into small pieces
  • Soy milk: 450 ml
  • Soy flour: 4 tbsp
  • Nutmeg: 1 pinch
  • Salt: 1 tsp
  • Pepper: 1 pinch
  • Onions: 2
  • Oil: 2 tbsp
  • Fresh parsley: 60 g
  • Parsley

Method

If you don't have soy flour, you can substitute corn starch. probably use a little less of it though!

Heat soy milk1 in a small saucepan, then remove from heat. Mix soy flour with soy milk2. Whisk together the soy flour mixture and the warm milk. Season with nutmeg, salt and pepper.

Combine the soy milk mixture and bread in a large mixing bowl. Mix thoroughly and cover. Let soak for .

Meanwhile, skin and finely dice onions. Heat oil in a pan over medium heat and cook onions until translucent. As the onions cook, wash and finely chop the fresh parsley.

Heat salted water to boiling in a large pot. Mix the onions, parsley and bread mixture and knead until a dough forms. If the dough seems dry, add more soy milk in small increments, until you can feel that most pieces of bread are no longer hard.

Form the dough into dumplings. Wet your hands and smooth the dumplings' surface. Add the dumplings to the boiling water and reduce the heat. Adding the dumplings should reduce the water's temperature so that it is no longer boiling. We want to keep it that way! Cook for .

Remove dumplings from water. Serve directly or cover and keep warm in an oven.
